So, I tried a new thing just now. I got this recipe from SparkPeople. It was submitted by user NewDebbie.
1 tsp butter
1 egg, lightly beaten
1/4 c ground flax meal (ground flax)
1/2-1 tsp ground cinnamon (I used the full 1 tsp)
1/2 tsp baking POWDER (Not soda!)
1 packet or 2 tsp Splenda (I just used real, raw sugar as I don’t like artificial sweeteners)
Spray mug with vegetable or olive oil spray to prevent sticking.
Add butter and microwave for 15 seconds to melt.
Add the rest of the ingredients to the mug, stir and microwave for 45 seconds. I added them in order, but I don’t think that matters much. Just stir well.
When done, it will come out of the mug on it’s own. If it’s not done, add a few more seconds.
This made a nice, fluffy, delicious muffin
It has a light, cinnamon taste to it.
As it cools, the muffin gets slightly more firm.
